Characteristics
Freshwater King Prawns have a delicate, sweet flavor similar to lobster, with firm, white flesh. They feature a bright blue tail, long legs, and antennae, and their color ranges from brownish to greenish with faint vertical stripes. These prawns typically weigh between 85 grams and 125 grams, and are primarily available from October to March.
Farm-raised scampi are meaty, moderately tender, light-colored, and have a more pronounced flavor compared to other species.
